Mini Crustless Quiche

Yield: 6

2 tablespoons herb butter
4 oz bacon or leftover meat, diced
6 oz shredded parmesan
2 tablespoons melted butter
5 eggs, beaten
¼ cup mushroom, diced
¼ cup yellow bell pepper, diced
¼ cup red bell pepper, diced
1 teaspoon salt
1 teaspoon Tijerina Global Spices Acadian Cajun Spice Blend
½ cup all-purpose flour
1 ½ cups milk

*I added a bit of goat cheese to the top of the quiche just prior to baking


Pre-heat oven to 350 degrees.

Coat ramekins with herb butter mixture.

Lay meat and cheese on the bottom of the ramekins.

In a medium bowl whisk together parmesan, butter, eggs, mushrooms, peppers, salt, Acadian Spice Blend, flour, and milk.

Pour into the prepared ramekins and bake in the pre-heated oven 25-30 minutes.
