Chai Latte Pudding Pie with Gustola Granola® Crust

Yield:  (1) 9-inch pie



1 ¾ cups Gustola Granola®
1 tsp Tijerina Global Spices Chai
1 T cornstarch
½ tsp salt
5 T butter, melted & cooled
1 large egg white


3 cups whole milk
1 5.1 oz package instant vanilla pudding mix
2 T Tijerina Global Spices Chai
1 tsp vanilla extract


1 cup heavy whipping cream
2 T powdered sugar
1 tsp vanilla extract
Chai and Granola for garnish


Pre-heat oven to 350 degrees.
Grease a 9-inch pie plate, set aside.


In a medium bowl, stir together granola, chai, cornstarch, salt, butter, and egg white until combined.
Press the mixture down into the bottom and up the sides of the greased pie plate. Bake 10 minutes. Remove from the oven and let cool completely.


In the bowl of a stand mixer, combine milk, pudding mix, chai and vanilla and whisk until stiff, 1-2 minutes.
Pour mixture into the cooled and prepared crust. Smooth with a spatula.
Cover with plastic wrap allowing it to touch the custard completely. Refrigerate 4 hours or overnight.


In the bowl of a stand mixer, combine heavy whipping cream, powdered sugar, and vanilla extract. Whisk until stiff peaks form.
Dollup onto the chilled pudding pie and sprinkle with Tijerina Global Spices Chai and Gustola Granola®.

Serve Chilled.
