Grilled Shrimp with Garlic and Black Pepper

Yield:  2 Servings

Ingredients
½ jalapeño, seeds removed and diced
3 cloves garlic, peeled and diced
1 tablespoon coarse ground black pepper
1/2 teaspoon Tijerina Acadian Cajun Spice Blend
1 tablespoon fresh citrus juice
2 tablespoons oil + additional for grill
½ pound large shrimp, peeled and deveined
Kosher salt to taste
Garnish:  Lime wedges
Sauce:  Romesco

Method

  1. Soak skewers in water 20 minutes.
  2. *In a large bowl whisk jalapeño, garlic, black pepper, citrus juice and 2 tablespoons oil.
  3. Toss in shrimp and coat with mixture. Season with salt.
  4. Heat grill (or grill pan) to medium-high heat and oil lightly so that the shrimp does not stick.
  5. Grill shrimp, turning once until lightly charred and cooked through, approximately 3-5 minutes.
  6. Serve immediately with lime wedges.

*If you want to get a kick out of the flavors, try adding these items in a mini food processor and give it a whiz.

Try it with Romesco sauce!
