Speedy Cottage Pie
Yield: 6-8 servings
*Cottage pie is with beef, shepherd’s pie is lamb
Ingredients
- 1 lb ground beef
- 1 teaspoon onion salt
- ½ teaspoon garlic salt
- 1 teaspoon dried Thyme
- 1 teaspoon dried Rosemary
- 1 can diced tomatoes
- 3 splashes of Worcestershire
- 2 cups frozen peas and carrots or vegetable medley
- 1 bag frozen mashed potatoes (Trader Joe’s has a great one!)
- 1 teaspoon Kosher salt
- Fresh ground black pepper
Method
- Pre-heat oven to 350° F
- In a cast-iron pan over medium high heat, cook the beef until no longer pink 5-6 minutes.
- Add onion salt, garlic salt, thyme, rosemary and salt and pepper to taste.
- Add tomatoes and Worcestershire and cook until reduced 10-12 minutes.
- Remove from heat and add peas and carrots and stir.
- Prepare mashed potatoes per package directions and top meat mixture with mashed potatoes.
- Cook in oven, uncovered 15-20 minutes or until potatoes are lightly browned
- Serve hot.
