Speedy Cottage Pie

Yield:  6-8 servings

*Cottage pie is with beef, shepherd’s pie is lamb

Ingredients

  • 1 lb ground beef
  • 1 teaspoon onion salt
  • ½ teaspoon garlic salt
  • 1 teaspoon dried Thyme
  • 1 teaspoon dried Rosemary
  • 1 can diced tomatoes
  • 3 splashes of Worcestershire
  • 2 cups frozen peas and carrots or vegetable medley
  • 1 bag frozen mashed potatoes (Trader Joe’s has a great one!)
  • 1 teaspoon Kosher salt
  • Fresh ground black pepper

Method

  1. Pre-heat oven to 350° F
  2. In a cast-iron pan over medium high heat, cook the beef until no longer pink 5-6 minutes.
  3. Add onion salt, garlic salt, thyme, rosemary and salt and pepper to taste.
  4. Add tomatoes and Worcestershire and cook until reduced 10-12 minutes.
  5. Remove from heat and add peas and carrots and stir.
  6. Prepare mashed potatoes per package directions and top meat mixture with mashed potatoes.
  7. Cook in oven, uncovered 15-20 minutes or until potatoes are lightly browned
  8. Serve hot.
