Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 1/2 cups whole milk
  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup peanut butter 
  • 2 teaspoons vanilla
  • 1 1/2 cups quick-cook oats
  • 1 1/2 cups cereal (I prefer something like Rice Krispies)
  • 1 cup sweetened coconut

Method

  • Line a baking sheet with parchment.
  • In a large saucepan, bring to a boil the butter, sugar, milk and cocoa powder for 1 minute. Remove from heat.
  • Stir in the peanut butter and vanilla until smooth, then stir in the oats, cereal and coconut.
  • Using a medium cookie scoop (or 2 tablespoonfuls), drop onto parchment paper.
  • Let cool until set, about 30-45 minutes.
