Ingredients
- 1/2 cup butter
- 2 cups sugar
- 1/2 cups whole milk
- 4 tablespoons unsweetened cocoa powder
- 1/2 cup peanut butter
- 2 teaspoons vanilla
- 1 1/2 cups quick-cook oats
- 1 1/2 cups cereal (I prefer something like Rice Krispies)
- 1 cup sweetened coconut
Method
- Line a baking sheet with parchment.
- In a large saucepan, bring to a boil the butter, sugar, milk and cocoa powder for 1 minute. Remove from heat.
- Stir in the peanut butter and vanilla until smooth, then stir in the oats, cereal and coconut.
- Using a medium cookie scoop (or 2 tablespoonfuls), drop onto parchment paper.
- Let cool until set, about 30-45 minutes.
