When I crave comfort food, it contains pasta or rice. Chicken noodle soup, lasagna, spaghetti, pastitsio, curry chicken with saffron rice, rice with butter and soy, macaroni and cheese and my fave, Ramen! Oh I love Ramen. A little cheese and a LOT of hot sauce. I digress.
One of the things I can make ahead and freeze for later is pasta sauce. Red sauce. “Awesome-Sauce” Red Sauce to be exact. Oh yeeeaaaaah! It is delicious, savory and full of fresh herbs and canned tomatoes…yah canned tomatoes. I am sure many of you stockpiled canned goods for the time being, which is why this recipe is good for all of us. Just doing my part to help you out. 🙂 Use up the cans and freeze a meal for later.
Like most of you I am missing my extended family quite a bit. We are very close and it has been difficult not to just drop in and say hello. I miss my mom and dad, my sister and my brothers. We talk every day and send virtual hugs. I am also a snail mail sender, but I have yet to send anything during these times as I am practicing “postal distancing”. Mail carriers are also among those that have continued to work and just imagine if you will what they have to touch all day long and where it comes from. We really don’t know.
My PSA for the day…
I ask that you wash off and sanitize your mailbox for their safety and yours. Thank you. So, no Easter cards this year. Shoot.
I joke that Easter has been cancelled this year, but when I dropped into the pharmacy yesterday you would never have guessed it. Chocolate everywhere, the dreaded Easter grass that seems to find its way into the couch cushions for years to come, Cadbury’s mini eggs, which I love and plastic wrapped pre-made baskets. Interesting. In a concerned effort I left without chocolate. Which I may regret later. It did make me miss my family just a bit more knowing that we may have a virtual Easter this year. Strange, but fun!
On this day or another chilly and windy day, I hope that you can enjoy this sauce as much as my family and I do. If you want to make it together with the family, I suggest you make your own pasta too. It is so easy. Truly. It is. Try it and you will see. It also tastes like nothing you have ever tasted and you can use up some of that flour you stockpiled too. 🙂 I know you did.
This recipe means a lot to me and to my family. My sister wrote a paper once that talked about this sauce. It must be good!
