Awesome-Sauce Red Sauce


8 Servings

1T olive oil
2 white onions, diced
8 garlic cloves, minced
10 fresh flat-leaf parsley sprigs
1 T fresh or ½ tsp dried oregano
1 tsp fresh rosemary, diced
8-10 leaves fresh basil (dried will work, but fresh is best (use 1 tablespoon dried))
2 (28oz) Cans whole, peeled, fire roasted tomatoes or 4 (14oz) can fire roasted diced tomatoes
1 T honey
1 tsp balsamic glaze (or balsamic vinegar)
1 cup chicken or vegetable stock
Crushed red pepper flakes (optional)


  1. In a medium saucepan over medium heat, add oil, onion, garlic and herbs.
  2. Sauté for 5 minutes.
  3. Add tomatoes and simmer, uncovered 20 minutes.
  4. Add honey, balsamic and stock and simmer another 20 minutes to 1 hour (allow the ingredients to marry together and the liquid to reduce to create a thickness)
  5. Remove from heat and let cool 5-10 minutes.
  6. Puree using an immersion blender or stand-up blender (liquid should be room temp for a blender)
  7. Salt to taste. Use on pasta immediately.

Store in an air-tight container in the refrigerator for up to one week or freeze up to 6 months.
