Orange Lavender Poppyseed Muffins

Yield:  12 Muffins

Ingredients

2 cups all purpose flour

1 tablespoon baking powder

½ teaspoon salt

2 large eggs

1 cup sour cream

2/3 cup honey

4-8* tablespoons (1/2 to 1 stick) warm melted butter

1 teaspoon vanilla bean paste

Method

  1. Pre-heat oven to 400 degrees.
  2. In a Grease a standard 12-muffin pan or line with paper cups.
  3. Whisk together in a large bowl: flour, baking powder, baking soda, salt.
  4. Whisk together in another bowl: eggs, sour cream, honey, butter, vanilla.
  5. Add wet mix to dry mix until moistened, do not overmix, batter should not be smooth.
  6. Divide batter among muffin cups and bake until a toothpick inserted in 1 or 2 muffins comes out clean, 12-15 minutes.
  7. Let cool for 2-3 minutes before removing from the pan.
