Orange Lavender Poppyseed Muffins
Yield: 12 Muffins
Ingredients
2 cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
2 large eggs
1 cup sour cream
2/3 cup honey
4-8* tablespoons (1/2 to 1 stick) warm melted butter
1 teaspoon vanilla bean paste
Method
- Pre-heat oven to 400 degrees.
- In a Grease a standard 12-muffin pan or line with paper cups.
- Whisk together in a large bowl: flour, baking powder, baking soda, salt.
- Whisk together in another bowl: eggs, sour cream, honey, butter, vanilla.
- Add wet mix to dry mix until moistened, do not overmix, batter should not be smooth.
- Divide batter among muffin cups and bake until a toothpick inserted in 1 or 2 muffins comes out clean, 12-15 minutes.
- Let cool for 2-3 minutes before removing from the pan.
