Serves: 4

Ingredients
1 large head Cauliflower (1 ¼  – 1 ½ lbs.)
3 T Extra Virgin Olive Oil
1 tsp. Smoked Paprika
4 oz. Shredded or sliced Sharp Cheddar Cheese
Kosher Salt to taste

Method

  1. Preheat oven to 400 degrees.
  2. Trim the cauliflower by cutting away the leaves and the stem up to where the stem meets the head.
  3. In a medium size baking dish, place the entire head of cauliflower upright.
  4. Sprinkle with Kosher salt and the smoked paprika.
  5. Roast for 25-30 minutes or until the florets begin to brown. If they begin to brown too quickly, lay a piece of foil over the top.
  6. Remove from the oven and top with the cheese. Place back into the oven until the cheese begins to bubble and slightly brown.
  7. Let rest for 2-3 minutes, sprinkle an additional bit of smoked paprika for color and serve by slicing off pieces.
