Potatoes for Street Tacos (Papas)
Yield: 8-10 servings
Ingredients
3 pounds Yukon Gold Potatoes, peeled and cubed
¼ cup oil
1 white onion, peeled and diced
1 roma tomato, diced
2 cloves garlic, peeled and diced
4 tablespoons oil (olive, avocado, peanut, grapeseed or canola, you need an oil with a high smoke point)
1 tablespoon Tijerina’s Carnitas Spice Blend (so easy!)
OR
1 Serrano or Jalapeño pepper, seeded and chopped
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon cumin
2 teaspoon smoked paprika
½ teaspoon garlic powder
Method
- Heat oil in a large pan (cast iron if you have it)
- Sauté potatoes, salt and pepper until al dente (6-8 minutes)
- Remember…do not stir for the first 4 minutes, you want the potatoes crispy
- Add onion, tomato, chile, cumin, paprika and garlic powder
- Simmer, covered until liquid has evaporated and potatoes are just soft (7-10 minutes)
