Elote en Vaso – Corn in a cup
Yield: 4 servings
Ingredients:
1 bag of frozen pre-cooked Roasted Corn
½ cup Chicken Broth
1 clove garlic, minced
4 tablespoons Crema Mexicana
4 tablespoons Butter, melted
Toppings:
¼ cup Cotija Cheese
1 Lime
Cilantro
Tijerina Carnitas Spice Blend, Chili Powder or Tajin
Method:
- Heat corn, garlic and broth in a small saucepan 5-7 minutes over medium heat, stirring so it does not burn
- In a large bowl, mix corn, mayonnaise and butter
- Pour mixture into cups and top with cotija cheese, lime juice, cilantro and Tajin seasoning.
Serve warm or cold
