Beet Salad

Yield:  2 Servings

Ingredients

2 large Beets

3 Carrots (I use multi colored carrots for an added confetti look)

1 Tablespoon Balsamic Glaze (You can also use a Tablespoon of balsamic vinegar + 1 teaspoon honey)

Kosher Salt

Tijerina Global Spices Acadian Cajun ( I use 1/8 teaspoon)

Herb of your choice (I use Mint or Basil)

Chèvre (I use a honey goat chèvre)

Method

  1. Grate the beets and carrots
  2. Add to a bowl
  3. Add balsamic, salt, spice of your choice, herbs
  4. Mix together, top with fresh herbs and chèvre
