Mexican Corn Fritters

Yield: 8-12 fritters

Ingredients

3-4 cups corn (preferably fresh off the cob)

1/3 cup all-purpose flour

1/3 cup cornmeal

½ teaspoon cumin

½ teaspoon chili powder

½ teaspoon kosher salt

½ teaspoon black pepper

2 large eggs, beaten

2 tablespoons fresh cilantro, chopped

¼ cup green onions, chopped

2 tablespoons canola oil

Method

  1. In a large bowl combine the flour, cornmeal, cumin, oregano, smoked paprika, chipotle powder, salt, and pepper. Add the eggs and mix thoroughly.
  2. Stir in the corn kernels, cilantro, and green onion.
  3. In a large skillet, heat the canola oil over medium heat.
  4. Form ¼ cup of the mixture into a ball in your hand, then flatten it into a disc shape or “fritter”.
  5. Continue to make fritters until you have used up all the mixture.
  6. Add the fritters to the skillet and cook for 2 minutes on each side until they are lightly browned or more for crispier fritters. Yum!

*Serve with a chipotle cream slaw.
