Mexican Corn Fritters
Yield: 8-12 fritters
Ingredients
3-4 cups corn (preferably fresh off the cob)
1/3 cup all-purpose flour
1/3 cup cornmeal
½ teaspoon cumin
½ teaspoon chili powder
½ teaspoon kosher salt
½ teaspoon black pepper
2 large eggs, beaten
2 tablespoons fresh cilantro, chopped
¼ cup green onions, chopped
2 tablespoons canola oil
Method
- In a large bowl combine the flour, cornmeal, cumin, oregano, smoked paprika, chipotle powder, salt, and pepper. Add the eggs and mix thoroughly.
- Stir in the corn kernels, cilantro, and green onion.
- In a large skillet, heat the canola oil over medium heat.
- Form ¼ cup of the mixture into a ball in your hand, then flatten it into a disc shape or “fritter”.
- Continue to make fritters until you have used up all the mixture.
- Add the fritters to the skillet and cook for 2 minutes on each side until they are lightly browned or more for crispier fritters. Yum!
*Serve with a chipotle cream slaw.
