Deep Fried Cheese Curds

Ingredients

  • 1 lb Fresh Cheese Curds
  • 3/4 cups buttermilk (or milk + juice of 1/2 lemon)
  • 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 egg
  • 2 teaspoons Kosher salt
  • Oil for frying (I use canola or peanut)
  • 1 lb Fresh Cheese Curds

Method

  1. Heat oil in a deep fryer or dutch oven on the stove with about 1 1/2 inches of oil to 375 degrees.
  2. In a small bowl mix milk + lemon juice if using and set aside for 5 minutes.
  3. In a medium size bowl mix buttermilk, flour, baking soda, egg and salt together.
  4. Add cheese curds and toss until fully coated. Batter will be wet, if you want a thicker batter add 1/4-1/2 cup more flour and mix.
  5. Very carefully add single curds into hot oil and cook until just golden or about 3-4 minutes.
  6. Drain on a paper towel.

Enjoy immediately!

Optional Sauce: 3 tablespoons mayonnaise, 1 tablespoon ketchup, juice from 1/4 lime or 1 teaspoon lemon juice.
