Pork Tenderloin in Coffee Marinade
Yield: Marinade for 2-pound pork tenderloin
Ingredients
- 2 lb pork tenderloin
- 1 cup prepared coffee, cooled or (1 cup water + 3 teaspoons espresso powder)
- ¼ cup soy
- ¼ cup molasses
- ¼ onion, peeled and diced
- 1/3 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 3 garlic cloves, minced
- 1 teaspoon thyme, dried or 1 tablespoon fresh
- ½ teaspoon fresh cracked black pepper
Method
- Add all ingredients except the pork to a food processor and pulse until blended.
- Put pork tenderloin in a shallow baking dish and cover with marinade. Wrap with plastic wrap or a tightly sealed lid and marinate in the refrigerator for a minimum 2 hours.
- Heat a grill to medium high heat and cook until internal temperature of pork is at 145 degrees. You may cook to 142-143 degrees and then remove from heat and wrap tightly in foil for 5 minutes to rest and temperature will increase to 145 degrees or more.
