Dinner Rolls

Yield: 12 rolls

Ingredients

2 cups all-purpose flour, or more if needed

1 packet rapid rise or quick rise yeast

2 tablespoons sugar

½ teaspoon salt

½ cup milk

¼ cup water

2 tablespoons unsalted butter

Method

  1. Grease an 8-inch round pan.
  2. In a large bowl of an electric stand mixer, combine ¾ cup flour, yeast, sugar and salt.
  3. Heat milk, water and butter until very warm (105-115 degrees F). Add to flour mixture.
  4. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  5. Stop mixer and add ¼ cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make a soft dough.
  6. Knead on a lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  7. Divide dough into 12 equal pieces and shape into balls. Place in greased 8-inch round pan.
  8. Cover and let rise until doubled in size, about 30 minutes.
  9. Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan and brush with additional melted butter, if desired.
