Lentil, Potato and Sausage Stew
Yield: 6 Servings
Ingredients
12 cups beef broth
3 medium size potatoes, peeled and diced
4 carrots, peeled and diced
1 onion, peeled and diced
3 cloves garlic, peeled and diced
1 bay leaf
Beef ring sausage or kielbasa, etc., sliced
2 cans Rotel diced tomatoes with green chiles
1 bag brown, whole lentils (if using split red lentils, reduce cooking time in half)
Salt and pepper to taste
Method
- In a slow cooker add broth, potatoes, carrots, onion, garlic and bay leaf. Cook on high 3-4 hours.
- Stir and remove bay leaf.
- Add sausage, bag of lentils and tomatoes. Cook for another 45 minutes to 1 hour or until lentils are cooked.
- Salt and pepper to taste.
