No Bake Chocolate Peanut Butter Bars

Yield: 16 Bars


1 cup brown sugar (sub 1 cups white sugar + 1 tablespoons molasses)
1 ¾ cups powdered sugar
1 cup butter (8 tablespoons), room temperature
1 ½ cups peanut butter
1 cup milk chocolate chips or semi-sweet chocolate chips or white if you desire


  1. Grease an 8×8 pan with butter or line with parchment.
  2. In a large bowl, cream brown sugar, powdered sugar, 5 tablespoons butter and peanut butter until well mixed.
  3. Press into the prepared pan.
  4. In a small, microwave-safe bowl, heat chocolate chips and remaining 2 tablespoons butter for 1 minute in 30 second intervals, stirring after each so you don’t burn the chocolate. (2 times)
  5. Stir carefully and continue to microwave in 30 second intervals until smooth, stirring after each.
  6. Pour the chocolate mixture over the peanut butter crust and spread evenly.
  7. Chill until firm, at least 3 hours or overnight.
  8. Let stand 10 minutes at room temperature before serving. Store leftovers in the refrigerator.
