Nonna’s Italian White Sauce

Yield:  For up to 2lbs of fresh pasta

Ingredients

16 oz cream cheese, cut into cubes

20 cloves of garlic, minced

1 bunch Italian parsley, stems removed and lightly chopped

1 stick butter (unsalted), cut into cubes

1-quart heavy cream

8 oz package shredded parmesan

4 oz asiago cheese

4 oz mozzarella* May add more upon your taste and desired thickness

Kosher salt

Pepper (if you have white pepper use it!)

Garlic salt

Hot sauce

Method

  1. Melt butter on medium heat in saucepan add garlic and sauté for 3 minutes.
  2. Add cream cheese and stir until melted.
  3. Add salt, pepper and garlic salt to taste.
  4. Slowly add by ¼ cup the heavy cream and stir.
    1. At this point taste and if necessary, add additional salt, garlic salt and pepper.
  5. Slowly incorporate cheese and continuously stir until thick and creamy.
  6. Add hot sauce to taste and simmer on low for 8-10 minutes.
  7. Prior to serving slowly stir in parsley.
