Loukoumades
Ingredients
2 packages active dry yeast (.25 oz each)
1 cup warm water
½ cup warm milk
¼ cup white sugar
1 teaspoon salt
1/3 cup butter, softened
3 eggs
4 cups all-purpose flour
½ cup honey
½ cup water
4+ cups of oil for frying
2 teaspoons ground cinnamon
Method
- Add yeast to warm water (no more than 100 degrees) in a bowl and let stand for 5 minutes and the yeast begins to form a creamy foam*.
- In a large bowl mix warm milk, sugar and salt until dissolved.
- Pour the yeast mixture into the milk mixture and stir to combine.
- Beat in the butter, eggs and flour until the mixture forms a smooth, soft dough.
- Cover and let rise about 30 minutes.
- Stir the dough well, cover and let rise for another 30 minutes.
- Mix honey and ½ cup water in a saucepan and bring to a boil over medium high heat.
- Turn off the heat and let the syrup cool.
- Heat oil in a deep fryer or large saucepan to 350 degrees.
- Place a tablespoon in a glass of water near the batter. Scoop up about 2 tablespoons of dough and drop it into the palm of your wet hand and roll the dough back into the spoon to form a round ball shape.
- Drop the dough into the hot oil and fry until they are golden brown and the flip to cook the other side. Approximately 2 minutes each side.
- Remove from the oil and drain on paper towels.
- Drizzle with honey syrup and sprinkle with cinnamon. Serve Hot!
*If a creamy foam does not form, then most likely the yeast is dead. Buy new yeast and start over.
