Ingredients
1 large head Cauliflower (1 ¼ – 1 ½ lbs.)
3 T Extra Virgin Olive Oil
1 tsp. Smoked Paprika
4 oz. Shredded or sliced Sharp Cheddar Cheese
Kosher Salt to taste
Method
- Preheat oven to 400 degrees.
- Trim the cauliflower by cutting away the leaves and the stem up to where the stem meets the head.
- In a medium size baking dish, place the entire head of cauliflower upright.
- Sprinkle with Kosher salt and the smoked paprika.
- Roast for 25-30 minutes or until the florets begin to brown. If they begin to brown too quickly, lay a piece of foil over the top.
- Remove from the oven and top with the cheese. Place back into the oven until the cheese begins to bubble and slightly brown.
- Let rest for 2-3 minutes, sprinkle an additional bit of smoked paprika for color and serve by slicing off pieces.
