This was a sauce I found in a Paleo cookbook believe it or not! (slightly modified)  Why was I browsing a Paleo cookbook you ask? One of my clients saw it and wanted me to replicate it and make it a bit more healthy since they were putting it on everything.  Well, now so am I!  So thank you friend.  Try it.  I have no other words…

Ingredients

2 T Olive Oil

1/2 cup Red Onion, chopped

1 cup Plain Whole Milk Greek Yogurt

1/4 cup Mayonnaise

2 T White Wine Vinegar

1 T Dijon Mustard

1 tsp Kosher Salt

1/4 tsp white pepper

1 Jalapeño, de-seeded and chopped (or more for heat, I used 3)

2 cups fresh Cilantro, leaves and stems, rinsed well to remove any dirt or residue

2 cups fresh Parsley, leaves and stems, rinsed well

4 cloves Garlic, crushed

Method

  1. Put all ingredients in a food processor and blend on high until all is combined and smooth.
  2. Taste and add additional salt if necessary.
