3-Cheese Sauce (Béchamel)

Ingredients

2 tablespoons butter

3 tablespoons flour

2 cups milk (2% or whole preferred)

1 cup sharp cheddar cheese

¾ cup Gouda cheese

¼ cup Parmesan

1 teaspoon Kosher Salt

Pepper to taste

Method

  1. Heat butter in a saucepan over medium heat.
  2. One melted, stir in flour, salt and pepper and mix for 1 minute. Do not stop stirring or it will burn.
  3. Gradually add in milk and heat through about 5 minutes.
  4. Add cheese and stir, small amounts at a time until the cheese is melted and smooth.
