Simply Fresh Hummus

Yield: 4 Servings

Ingredients

250 Grams Garbanzo Beans, drained and rinsed + reserved juice

1 oz EVOO

2 oz Fresh squeezed lemon juice (not optional)

2 oz Tahini

10 grams Garlic

½ teaspoon ground Cumin

1.5 oz reserved garbanzo liquid (3-4 Tablespoons)

1 teaspoon Kosher salt

Method

  1. In a bowl of a large food processor combine tahini and lemon juice and process for 1 minute. With a spatula, scrape the sides and bottom of the bowl and process for another 30 seconds.
  2. Add oil, garlic, cumin and salt to the whipped tahini and lemon. Process for 30 seconds or until well blended.
  3. Add half the chickpeas to the food processor and process for 2 minutes. Scrape the sides and bottom of the bowl, then add remaining chickpeas and process until thick and smooth. 3-4 minutes.
  4. With the food processor on, slowly add reserved garbanzo liquid until you reach your desired consistency. Salt to taste if needed.
