Simply Fresh Hummus
Yield: 4 Servings
Ingredients
250 Grams Garbanzo Beans, drained and rinsed + reserved juice
1 oz EVOO
2 oz Fresh squeezed lemon juice (not optional)
2 oz Tahini
10 grams Garlic
½ teaspoon ground Cumin
1.5 oz reserved garbanzo liquid (3-4 Tablespoons)
1 teaspoon Kosher salt
Method
- In a bowl of a large food processor combine tahini and lemon juice and process for 1 minute. With a spatula, scrape the sides and bottom of the bowl and process for another 30 seconds.
- Add oil, garlic, cumin and salt to the whipped tahini and lemon. Process for 30 seconds or until well blended.
- Add half the chickpeas to the food processor and process for 2 minutes. Scrape the sides and bottom of the bowl, then add remaining chickpeas and process until thick and smooth. 3-4 minutes.
- With the food processor on, slowly add reserved garbanzo liquid until you reach your desired consistency. Salt to taste if needed.
