Yuca (Cassava) Fries with Cumin  – Havana

Yield:  4 Servings

Ingredients

1 large root of Yucca (Cassava), peeled and cut into fries

Oil for frying Yucca

Salt

Cumin

Method

  1. Bring a large pot of water to a boil.
  2. Boil Yucca until tender, but not mushy.
  3. Dry on a paper towel.
  4. Heat oil in a fryer or dutch oven.
  5. Fry Yucca until golden.
  6. Place on paper towel and sprinkle on salt and cumin.
  7. Let oil release on a paper towel.
  8. Serve with creamy chimichurri.
