Cilantro Garlic Chutney
Yield: 1 cup
Ingredients
1 ½ tablespoons lemon juice
1 ½ tablespoons water
1 bunch (3 oz) fresh cilantro leaves and stems, coarsely chopped
1 small shallot, cut into quarters
2 cloves garlic, peeled
¼ inch piece of ginger, peeled and cut in half
1 fresh green chile (jalapeño) seeded and rough chopped
½ teaspoon sugar
½ teaspoon salt
Pinch of pepper
Method
- In a small food processor pulse lemon juice water and half of the cilantro until a slushy paste is formed.
- Add the remaining cilantro and process until blended.
- Add the remaining ingredients and continue processing until blended.
- Taste and adjust seasoning.
- Cover and chill until ready to serve.
