Cilantro Garlic Chutney

Yield:  1 cup

Ingredients
1 ½ tablespoons lemon juice
1 ½ tablespoons water
1 bunch (3 oz) fresh cilantro leaves and stems, coarsely chopped
1 small shallot, cut into quarters
2 cloves garlic, peeled
¼ inch piece of ginger, peeled and cut in half
1 fresh green chile (jalapeño) seeded and rough chopped
½ teaspoon sugar
½ teaspoon salt
Pinch of pepper

Method

  1. In a small food processor pulse lemon juice water and half of the cilantro until a slushy paste is formed.
  2. Add the remaining cilantro and process until blended.
  3. Add the remaining ingredients and continue processing until blended.
  4. Taste and adjust seasoning.
  5. Cover and chill until ready to serve.
