Steak au Poivre
Ingredients
5 T Poivre de Cuisine or seasoning blend of your choice
Kosher Salt (if blend does not include salt)
4 x 6-8 oz Beef Steaks
4 T oil
6 T butter
5 T Beef Stock or Beef Consomme
3 T fresh chopped Parsley
Method
- Preheat large cast iron skillet in oven at 350-400 degrees or on the stove top, gradually increasing the heat to medium-high.
- Rub seasoning blend and salt onto both sides of each steak.
- Add oil to preheated skillet and put in the steaks. Fry on one side thoroughly until a good thick crust has formed. Add 4 Tablespoons butter and allow to color to nut-brown.
- Turn the steaks over, and finish cooking to suit your taste. Baste with the buttery juices as you go. Remove the steaks to hot plates and allow to rest.
- Add the beef stock and whisk in the final bit of butter and parsley.
- Give it a final boil until it reduces to the desired consistency and pour over the steaks.
