Caramelized Brussels Sprouts, Blue Cheese & Pancetta
Yield: 12 Servings
Ingredients
2 lbs. Brussels Sprouts (I buy from Trader Joe’s and they come cut in half and seasoned)
2 6 oz. containers diced Pancetta
2 T Olive Oil
2 Cloves Garlic – Minced
½ cup blue cheese
* Optional: ½ cup rough chopped walnuts
Method
1. Heat oil in a large, non-stick skillet, saute the brussels sprouts for 7 minutes.
2. Add the garlic and pancetta and continue to cook until the brussels sprouts begin to caramelize another 3-4 minutes.
3. Remove from the heat and add blue cheese.
4. Toss until the cheese is melted and serve immediately.
