Cheesy Cheddar Grits (Polenta)
Yield: 4 servings
Ingredients
- 3 cups cold water
- 1 cup cornmeal
- 1 ½ cups shredded extra sharp cheddar cheese
- 1 tablespoon butter
- 1/8 teaspoon Tijerina Carnitas or Acadian Spice Blend (may use cayenne)
- salt and pepper to taste
Method
1. In a medium saucepan, whisk together water and cornmeal.
2. Bring to a boil and reduce heat to medium.
3. Simmer, stirring occasionally, until thickened and no longer raw tasting 7-8 minutes.
4. Stir in remaining ingredients until well combined.
Serve with grilled shrimp for a classic shrimp ‘n grits meal!
