Cheesy Cheddar Grits (Polenta)

Yield: 4 servings

Ingredients

  • 3 cups cold water
  • 1 cup cornmeal
  • 1 ½ cups shredded extra sharp cheddar cheese
  • 1 tablespoon butter
  • 1/8 teaspoon Tijerina Carnitas or Acadian Spice Blend (may use cayenne)
  • salt and pepper to taste

Method

1.      In a medium saucepan, whisk together water and cornmeal.  

2.      Bring to a boil and reduce heat to medium.  

3.      Simmer, stirring occasionally, until thickened and no longer raw tasting 7-8 minutes.

4.      Stir in remaining ingredients until well combined.

Serve with grilled shrimp for a classic shrimp ‘n grits meal!
