Yuca (Cassava) Fries with Cumin – Havana

Ingredients
1 large root of Yucca (Cassava), peeled and cut into fries
Oil for frying Yucca
Salt
Cumin
Method
- Bring a large pot of water to a boil.
- Boil Yucca until tender, but not mushy.
- Dry on a paper towel.
- Heat oil in a fryer or dutch oven.
- Fry Yucca until golden.
- Place on paper towel and sprinkle on salt and cumin.
- Let oil release on a paper towel.
- Serve with creamy chimichurri.
