{"id":945,"date":"2019-10-30T08:42:11","date_gmt":"2019-10-30T13:42:11","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=945"},"modified":"2019-10-30T08:42:11","modified_gmt":"2019-10-30T13:42:11","slug":"lamb-chops-with-chimichurri","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2019\/10\/30\/lamb-chops-with-chimichurri\/","title":{"rendered":"Lamb Chops with Chimichurri"},"content":{"rendered":"<h3><strong>Lamb Chops with Chimichurri <\/strong><\/h3>\n<h3><strong>Demonstrated at the <a href=\"https:\/\/www.sfa-mn.org\/garlicfest\/\">Garlic Festival of Minnesota 2019\u00a0<\/a>in Hutchinson, MN by yours truly, Jessica Tijerina.<\/strong><\/h3>\n<p><strong>Ingredients (Chimichurri)<\/strong><\/p>\n<p><strong>Yield:\u00a0 3 cups<\/strong><\/p>\n<p>12 cloves Garlic<br \/>\n2 cups Parsley, chopped<br \/>\n2 tablespoons fresh Oregano or 2 teaspoons dried<br \/>\n2 tablespoons fresh Thyme<br \/>\n2 teaspoons fresh Rosemary<br \/>\n1 teaspoon crushed red pepper flakes<br \/>\n\u00bd cup Extra Virgin Olive Oil<br \/>\n1 teaspoon Kosher Salt<br \/>\n\u00bd teaspoon fresh cracked black pepper<br \/>\n3 tablespoons Red or White Wine Vinegar<\/p>\n<p><strong>Method (Chimichurri)<\/strong><\/p>\n<ol>\n<li>Place all chimichurri sauce ingredients in a blender or food processor and pulse until well chopped, but not pureed.<\/li>\n<li>Refrigerate until ready to use.<\/li>\n<\/ol>\n<p>Store in an airtight container in the refrigerator for up to 3 days<\/p>\n<p><strong>Ingredients (Lamb Chops)<\/strong><\/p>\n<p><strong>Yield:\u00a0 Serves 4<\/strong><\/p>\n<p>4 lamb chops, each about \u00be inch thick<br \/>\n\u00bc cup olive oil<br \/>\n1 large clove of garlic, minced<br \/>\n1 teaspoon\u00a0rosemary<br \/>\n1 teaspoon Kosher salt<br \/>\n\u00bc teaspoon smoked paprika<br \/>\n\u00bc teaspoon crushed red pepper flakes<br \/>\n\u00bc cup minced fresh parsley<br \/>\n1 tablespoon lemon juice<br \/>\n\u00bc teaspoon fresh cracked black pepper<\/p>\n<p><strong>Method (Lamb Chops)<\/strong><\/p>\n<ol>\n<li>Combine all lamb seasoning and rub on lamb or toss around in a bowl.<\/li>\n<li>Heat grill or grill pan on high heat.<\/li>\n<li>Cook lamb chops on the first side for about 3 minutes.<\/li>\n<li>Flip to cook other side for 2-3 minutes or until desired doneness.
