{"id":894,"date":"2019-10-11T17:58:18","date_gmt":"2019-10-11T22:58:18","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=894"},"modified":"2019-10-11T17:58:18","modified_gmt":"2019-10-11T22:58:18","slug":"kong-bao-chicken-chinese-take-out","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2019\/10\/11\/kong-bao-chicken-chinese-take-out\/","title":{"rendered":"Kong Bao Chicken (Chinese Take Out)"},"content":{"rendered":"<h3><strong>Kung Pao (Kong Bao) Chicken <\/strong><\/h3>\n<h4><strong><em>*Recipe courtesy of Jessica Tijerina*<\/em><\/strong><\/h4>\n<p>Servings: 4<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n1 lb. chicken breast<br \/>\n4 tsp peanut oil<br \/>\n2 oz peanuts<br \/>\n1 teaspoon dried chili flakes<br \/>\n2 cloves garlic, peeled and sliced<br \/>\n6 slices peeled ginger<br \/>\n1 tablespoon rice wine<br \/>\n4 scallion, cut into large pieces, both green and white parts<\/p>\n<p><strong>Marinade<\/strong><br \/>\n1 teaspoon salt<br \/>\n2 teaspoons light soy sauce<br \/>\n2 teaspoons rice wine<br \/>\n1 teaspoon cornstarch<br \/>\nBlack pepper to taste<\/p>\n<p><strong>Sauce<\/strong><br \/>\n1 tablespoon light soy sauce<br \/>\n2 teaspoons rice vinegar<br \/>\n2 teaspoons sugar<br \/>\n1 \u00bd teaspoons cornstarch<br \/>\n6 tablespoons chicken stock<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Cut chicken into small chunks and place into a bowl.<\/li>\n<li>Add the ingredients of the marinade to the chicken, cover and let sit at least 30 minutes.<\/li>\n<li>To prepare the sauce, mix all sauce ingredients together very well and set aside.<\/li>\n<li>In a wok, add oil over medium heat, add peanuts while the oil is still cold and stir.<\/li>\n<li>When the oil begins to heat, take out the nuts for later use.<\/li>\n<li>Add the garlic and ginger and stir for a few seconds.<\/li>\n<li>Add the chicken, turn and toss for 1 minute.
