Red Beets, shredded<br \/>\n3 T Red Wine Vinegar<br \/>\n5 oz Honey\u00a0Ch\u00e8vre (<a href=\"https:\/\/www.traderjoes.com\/digin\/post\/chevre-with-honey\">Trader Joe&#8217;s<\/a> sells a 5 oz log)<br \/>\nFresh Chives for garnish, rough chopped<br \/>\nKosher Salt and fresh cracked Black Pepper to taste<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 375 degrees and spread the walnuts on a baking sheet and toast for 8-10 minutes stirring once.<\/li>\n<li>Remove and rough chop. Set aside.<\/li>\n<li>Warm 2 T of the oil in a medium saut\u00e9 pan over medium high heat. Add the beets and a pinch of salt. Stir until they begin to caramelized, about 10 minutes.<\/li>\n<li>Stir in the vinegar and cook another 2 minutes.<\/li>\n<li>Remove from heat and stir in the remaining oil, walnuts and salt and pepper.<\/li>\n<li>Serve immediately and top with the honey ch\u00e8vre and chives.
