{"id":612,"date":"2019-03-28T13:29:55","date_gmt":"2019-03-28T18:29:55","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=612"},"modified":"2019-03-28T13:29:55","modified_gmt":"2019-03-28T18:29:55","slug":"white-bean-kale-and-sausage-soup","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2019\/03\/28\/white-bean-kale-and-sausage-soup\/","title":{"rendered":"White Bean, Kale and Sausage Soup"},"content":{"rendered":"<p>Serves: 6\u00a0 \u00a0 Prep Time: 15 Minutes\u00a0 \u00a0 Cook Time: 20 Minutes<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 T Olive Oil<br \/>\n1 cup Carrots, sliced into medallions<br \/>\n1 cup Celery, chopped<br \/>\n1 cup Red Onion, diced<br \/>\n2 cloves Garlic, minced<br \/>\n2 cans Cannellini Beans, not drained<br \/>\n1 package any pre-cooked sausage (ie Trader Joe&#8217;s Andouille or Garlic Chicken Sausage), sliced<br \/>\n64 oz. Vegetable or Chicken Stock<br \/>\n1 bunch Kale, rinsed and rough chopped<br \/>\nSalt and Pepper to taste<\/p>\n<p>(Carrots, Celery and Onion are called Mirepoix and can be purchased already chopped in one container at Trader Joe&#8217;s)<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1. In in medium stock pot over high heat add oil.<br \/>\n2. Add mirepoix and garlic and cook 5 minutes until onion begins to sweat, but garlic does not burn.<br \/>\n3. Add cannellini beans and sausage and cook an additional 10 minutes,<br \/>\n4. Add broth and cook on high until boiling, turn heat back down to a simmer and add kale.<br \/>\n5. Add salt and pepper to taste.<br \/>\n6.
