are especially flavorful for this recipe)<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">1 Red Onion, quartered<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">3 Garlic Cloves, peeled and cut in half<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">\u00bd Jalape\u00f1o or Serrano, de-seeded and removed and discarded, crush and slice remaining<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">3 x 32 oz Chicken Stock or Chicken Bone Broth if available<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Juice of 2 limes<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Zest of 1 lime<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">1<\/span><\/span><\/span><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">\u00a0tsp White Pepper<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">1 can Coconut Milk or Cream if you prefer a thicker consistency<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">1 T Kosher Salt<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"color: #333333;\"><span style=\"font-size: small;\">16 oz Thai noodles<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><b>Method<\/b><\/span><\/span><\/span><\/p>\n<ol>\n<li><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Heat a medium stock pot over medium-high heat.\u00a0 Add carrots, celery, onion, garlic, jalape\u00f1o and lemongrass. *Be sure the lemongrass has been slightly crushed, this releases the aroma and flavor. <\/span><\/span><\/span><\/li>\n<li><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Cook vegetables for 5-7 minutes, stirring occasionally, do not let them brown or burn.<\/span><\/span><\/span><\/li>\n<li><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Add in the stock and turn the heat to high and boil for 20 minutes or until the vegetables begin to soften.<\/span><\/span><\/span><\/li>\n<li><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Strain the broth and set vegetables aside. Pour the broth back into the stock pot and bring to a boil. <\/span><\/span><\/span><\/li>\n<li><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Add the lime juice, zest, white pepper and chicken. Cook 3-5 minutes or until the chicken is cooked through.. <\/span><\/span><\/span><\/li>\n<li><span style=\"color: #333333;\"><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Add in the coconut milk and salt. Taste.
