Layers and layers and layers.<\/p>\n<p>Enter Lasagna.<\/p>\n<p>Spinach lasagna, red sauce, cream sauce, zucchini noodles, whole wheat noodles, beef, lamb, fresh mozzarella, cottage cheese, fresh basil, dried herbs&#8230;Oh my!<\/p>\n<p>I will try it all, but when I make it in batches to freeze for the winter, I always make the same old lasagna. Beef and pork, fresh basil, fresh herbs, mozzarella AND cottage cheese.<\/p>\n<p>I love the weight of the pan when loading it into the oven, you almost need a spotter.\u00a0 The layers help to make the picture perfect slice and onto a guests dinner plate or just a night in by myself. I need little else for dinner, but often I will make a garlic bread to go along to catch the remainder of the sauce after the last full bite has made its way into my already exploding stomach. Like spaghetti, I do not know (or care) when to stop. That&#8217;s ok with me. I am not going to go workout or ride a roller coaster after a meal like this. EVER!<\/p>\n<p>If you don&#8217;t have an oven liner, you&#8217;re going to need one&#8230;find it on Amazon\u00a0<a href=\"https:\/\/www.amazon.com\/Kitchen-Home-Oven-Liner-Set\/dp\/B01M0U58W8\/ref=sr_1_1_sspa?ie=UTF8&amp;qid=1538448434&amp;sr=8-1-spons&amp;keywords=oven+liner&amp;psc=1\">here.<\/a><\/p>\n<p>I make 2-3 lasagna at at time, so that I have something quick to either pop into the oven or bring to a friend. It is a comfort food, a soul enriching experience until the last bite. Even if you weren&#8217;t hungry, you all of a sudden can&#8217;t believe your plate is empty. Spicy Ground Italian Sausage<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">\u00bd cup Red Onion &#8211; Diced<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">4 Cloves Garlic &#8211; Minced<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">2 14 oz cans Fire Roasted Diced Tomatoes<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">1 6 oz can Tomato Paste<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">1 6.5 oz can Tomato Sauce<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">\u00bd cup Beef Broth<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">2 T Brown Sugar<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">1 t Herbes de Provence<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">\u00bc cup Fresh Basil \u2013 Chopped<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">\u00bc cup Fresh Parsley \u2013 Chopped<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">1 T Red Pepper Flakes<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">12 Lasagna Noodles &#8211; No-Boil<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">16 oz Ricotta Cheese \u2013 Whole Milk<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">1 Egg<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">2 t Kosher Salt<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">16 oz Fresh Mozzarella \u2013 Sliced<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\">\u00be cup Parmesan Cheese \u2013 Grated (Parmesan-Reggiano preferred)<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><b>Method<\/b><\/span><\/p>\n<ol>\n<li><span style=\"font-family: Arial, sans-serif;\">Grease a 9&#215;13 pan<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">In a large dutch oven cook over medium heat, beef, pork, onion and garlic until brown<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Add in fire roasted tomatoes, tomato paste, tomato sauce and beef broth<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Add in brown sugar, basil, red pepper flakes and 1 T parsley<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Simmer, covered for about 1-1\/2 hours and the sauce is reduced to a thick consistency<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">In a medium bowl mix ricotta, remaining parsley, salt, herbes de provence and egg<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Pre-Heat oven to 375 degrees<\/span><\/li>\n<\/ol>\n<p><span style=\"font-family: Arial, sans-serif;\"><b>Assembly<\/b><\/span><\/p>\n<ol>\n<li><span style=\"font-family: Arial, sans-serif;\">Pour \u00bc cup of the meat sauce into 9&#215;13 pan<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Place 4 noodles on top of meat sauce<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Spread 1\/3 of the ricotta cheese on top<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Top with mozzarella slices<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Pour more meat sauce on top of mozzarella<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Sprinkle Parmesan over meat sauce<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Repeat.<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Cover lasagna with foil, sprayed with oil to avoid cheese sticking to top and make sure the foil is not touching the top of the lasagna<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Bake in the preheated oven for 40 minutes, remove the foil and bake an additional 15 minutes until cheese is golden brown and lasagna is bubbling<\/span><\/li>\n<li><span style=\"font-family: Arial, sans-serif;\">Cool for 20 minutes before serving.\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0<\/span><span style=\"font-family: Arial, sans-serif;\"><b>Enjoy!<\/b><\/span><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>A pair of well worn jeans, cozy socks, an over-sized sweater that could double as a blanket.
