Kosher salt<br \/>\n1 tsp. white pepper<br \/>\n2 cups buttermilk (substitution: 2 cups milk 2 T. lemon, let sit for 5 minutes)<br \/>\n\u00bd cup \u00bc\u201d diced prosciutto<br \/>\n\u00bd cup Irish cheddar (or your own preference)<br \/>\n1\/2 onion, diced<br \/>\n1 clove garlic, diced<br \/>\n1 shallot, diced<br \/>\n(I use the pre-diced package of onion, garlic and shallot from Trader Joe\u2019s)<\/p>\n<p><strong>Method<\/strong><a href=\"http:\/\/senoritatijerina.files.wordpress.com\/2014\/03\/image.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-74\" src=\"http:\/\/senoritatijerina.files.wordpress.com\/2014\/03\/image.jpeg?w=112\" alt=\"\" width=\"112\" height=\"150\" \/><\/a><br \/>\nPreheat oven to 450 degrees.<br \/>\nGrease muffin tin with Kerry Gold butter.<br \/>\nIn a skillet, saut\u00e9 the diced prosciutto, onion, garlic and shallot, 5 minutes.<br \/>\nRemove from heat and cool on a paper towel to allow grease to soak up.<br \/>\nToss cheese in 1\/2 tsp. of flour and set aside.<br \/>\nCombine flour, baking soda, salt, white pepper and buttermilk in a large mixing bowl and mix with a wooden spoon or in an upright mixer with dough hook.<br \/>\nGently fold in the saut\u00e9 mix and cheese.<br \/>\nPlace onto a lightly floured surface.<br \/>\nPat the dough gently into a square shape.<br \/>\nFold the dough in half several times, bringing the dough in from the outside toward the middle, all the way around. Add a pinch of flour if necessary. Pat into a larger square.
