{"id":2157,"date":"2021-10-07T18:23:06","date_gmt":"2021-10-07T23:23:06","guid":{"rendered":"https:\/\/jessicatijerina.com\/?p=2157"},"modified":"2025-03-04T13:04:43","modified_gmt":"2025-03-04T19:04:43","slug":"pasta-with-brussels-sprouts-squash-anchovy-and-lemon-sauce","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2021\/10\/07\/pasta-with-brussels-sprouts-squash-anchovy-and-lemon-sauce\/","title":{"rendered":"Pasta with Brussels Sprouts, Squash, Anchovy and Lemon Sauce"},"content":{"rendered":"<p><strong>Prepared for <a href=\"https:\/\/seward.coop\/\">Seward Co-Op<\/a> Virtual Class 10\/2021<\/strong><\/p>\n<p><strong>Yield: <\/strong>4-6 servings<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n1 pound pasta of your choice, I will use angel hair as it cooks quickly<br \/>\n2 tablespoons olive oil, plus extra to drizzle<br \/>\n2 garlic cloves, thinly sliced<br \/>\n4 anchovies, chopped<br \/>\n1 teaspoon capers<br \/>\n\u00bd cup broth or cooking sherry<br \/>\n8 brussels sprouts, rinsed and cut in half<em> (may need to cut into quarters if large)<\/em><br \/>\n2 cups (10 oz) diced butternut squash<br \/>\nZest and juice of 1 lemon<br \/>\n\u00bc cup grated parmesan, plus extra for topping<br \/>\nFresh basil, chiffonade for garnish<\/p>\n<p>Add a little smokey flavor and zip using<a href=\"https:\/\/jessicatijerina.com\/index.php\/product\/acadian-cajun-spice-blend\/\"> Tijerina&#8217;s Acadian Cajun Spice Blend.<\/a> (click to order) Salt Free too!<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Cook pasta in a large pan of boiling, salted water according to packet instructions. Drain, and reserve some liquid, about \u00bd cup. Set aside.<\/li>\n<li>Heat oil in a large frypan over medium-high heat. Add garlic and cook, stirring until lightly golden. Add anchovy and capers, and cook, stirring until heated through.<\/li>\n<li>Add broth (or sherry) and simmer until reduced slightly, about 2 minutes.<\/li>\n<li>Add brussels sprouts and squash and cook 7-8 minutes or until softened.<\/li>\n<li>Add the pasta to the mixture along with the \u00bd cup reserved cooking liquid, and toss everything together well.<\/li>\n<li>Add the lemon zest and juice, and drizzle with a little olive oil. Stir in the parmesan for a creamy lemon sauce.
