{"id":2155,"date":"2021-10-07T18:19:53","date_gmt":"2021-10-07T23:19:53","guid":{"rendered":"https:\/\/jessicatijerina.com\/?p=2155"},"modified":"2025-03-04T13:04:43","modified_gmt":"2025-03-04T19:04:43","slug":"fall-vegetable-and-mozzarella-bruschetta","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2021\/10\/07\/fall-vegetable-and-mozzarella-bruschetta\/","title":{"rendered":"Fall Vegetable and Mozzarella Bruschetta"},"content":{"rendered":"<p><strong>As seen on the<a href=\"https:\/\/seward.coop\/\"> Seward Co-Op Minneapolis Friendship Store<\/a> Virtual Class 10\/8\/21<\/strong><\/p>\n<p><strong>Yield: <\/strong>4-6 servings<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 bell pepper, color of your choice, diced<br \/>\n\u00bd onion, peeled and diced<br \/>\n4 cloves garlic, peeled and minced<br \/>\n1 cup squash, finely diced <em>(acorn, butternut, kabocha\u2026)<\/em><br \/>\n4 oz fresh mozzarella balls, cut into quarters<em> (may sub shredded mozz)<\/em><br \/>\n2 tablespoons olive oil<br \/>\n1 tablespoon fresh herbs<br \/>\n1 teaspoon salt<br \/>\nFresh cracked black pepper<br \/>\n1-2 tablespoons balsamic vinegar<br \/>\n1 demi baguette, sliced on the bias<\/p>\n<p><strong>Method <\/strong><\/p>\n<ol>\n<li>Pre-heat oven to 425 degrees. Line 2 baking sheets with parchment.<\/li>\n<li>In a bowl combine peppers, onion, garlic, squash, oil, herbs, salt, and pepper and toss to coat.<\/li>\n<li>Spread out the vegetables on one baking sheet and roast for 15-20 minutes or until vegetables are soft.<\/li>\n<li>Remove vegetables from oven, let cool 5 minutes and put back in bowl and toss with balsamic vinegar. Then, add in mozzarella and toss again. Salt to taste.<\/li>\n<li>Reduce oven heat to 400 degrees.<\/li>\n<li>Place baguette slices on the second baking sheet and brush with oil.\n<ol>\n<li><em>(Top secret kitchen hack: I use an olive oil spray can)<\/em><\/li>\n<\/ol>\n<\/li>\n<li>Bake baguette for 4-6 minutes or until golden brown.
