{"id":2101,"date":"2021-05-14T17:39:58","date_gmt":"2021-05-14T22:39:58","guid":{"rendered":"https:\/\/jessicatijerina.com\/?p=2101"},"modified":"2025-03-04T13:04:43","modified_gmt":"2025-03-04T19:04:43","slug":"chilled-asparagus-soup-with-cajun-cream-and-lemon","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2021\/05\/14\/chilled-asparagus-soup-with-cajun-cream-and-lemon\/","title":{"rendered":"Chilled Asparagus Soup with Cajun Cream and Lemon"},"content":{"rendered":"<h4>Chilled Asparagus Soup with Cajun Cream<\/h4>\n<h5>Jessica Tijerina <a href=\"http:\/\/www.jessicatijerina.com\">www.jessicatijerina.com<\/a><\/h5>\n<h5><strong>Yield:<\/strong>\u00a0 4-6 servings<\/h5>\n<h4>Ingredients<\/h4>\n<p>2 lb. fresh asparagus, trimmed of woody ends<br \/>\n2 cloves garlic, peeled<br \/>\n2 white onion, peeled and quartered<br \/>\n1 c. fresh mint leaves<br \/>\n1-pint low sodium vegetable broth<br \/>\n1 teaspoon salt<br \/>\n\u00bc teaspoon white pepper<br \/>\n1 c. heavy cream<br \/>\n1 lemon, cut in half<\/p>\n<p><strong><u>Cajun Cream<\/u><\/strong><br \/>\n1 cup sour cream<br \/>\n1 teaspoon Cajun spice blend <a href=\"https:\/\/jessicatijerina.com\/index.php\/product\/acadian-cajun-spice-blend\/\"><strong><em>(I use Tijerina Global Spices Acadian Cajun Spice Blend)<\/em><\/strong><\/a><\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Boil a large pot of salted water. (Approximately 16 cups water and 1\/8 cup salt.<\/li>\n<li>Add the asparagus garlic and onion and cook until tender (approximately three minutes).<\/li>\n<li>Remove the vegetables from the boiling water and transfer them to an ice and water bath.<\/li>\n<li>Drain the water and set the bowl of vegetables aside.<\/li>\n<li>In a medium bowl, whisk together the sour cream and Cajun seasoning. Add salt if desired. Set aside.<\/li>\n<li>Put the asparagus, garlic and onion in a blender or food processor.
