{"id":2037,"date":"2021-03-02T12:39:32","date_gmt":"2021-03-02T18:39:32","guid":{"rendered":"https:\/\/jessicatijerina.com\/?p=2037"},"modified":"2025-03-04T13:04:43","modified_gmt":"2025-03-04T19:04:43","slug":"traditional-dublin-coddle","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2021\/03\/02\/traditional-dublin-coddle\/","title":{"rendered":"Traditional Dublin Coddle"},"content":{"rendered":"<h2>Dublin Coddle<\/h2>\n<p><strong>Yield:<\/strong> 4-6 servings<\/p>\n<p><strong>Ingredients\u00a0\u00a0\u00a0\u00a0\u00a0 <\/strong><\/p>\n<p>6-8\u00a0butcher\u2019s pork sausages (approx. 2 lbs.)<br \/>\n6\u00a0slices of thick cut bacon, chopped<br \/>\n1\u00a0large onion, chopped<br \/>\n2\u00a0carrots, chopped<br \/>\n1 stalk celery, chopped<br \/>\n<a href=\"https:\/\/jessicatijerina.com\/index.php\/product\/acadian-cajun-spice-blend\/\"><strong><em>\u00bd teaspoon Tijerina Global Spices Acadian Cajun Spice Blend (click to order)<\/em><\/strong><\/a><br \/>\nSalt to taste<br \/>\nFreshly ground black pepper<br \/>\n1\u00a0bay leaf<br \/>\n\u00bd cup pearl barley, I use quick cook barley to speed up the process<br \/>\n4 large Yukon Gold potatoes, sliced<br \/>\n2 cups chicken stock<br \/>\n2 tablespoon butter, cut into cubes<br \/>\nlarge bunch of fresh parsley, chopped<\/p>\n<h3>Method<\/h3>\n<ol>\n<li>Preheat oven to 425 degrees.<\/li>\n<li>Heat a large cast iron skillet over medium-high heat. Once hot, drizzle a drop of oil in the pan and fry the bacon and sausages until golden brown on all sides. Remove to a plate and drain on paper towels. Once cooled, slice the sausages into thirds or if you like, bite-size pieces.<\/li>\n<li>To the skillet add the onion, carrots, and celery. Saute for 3 minutes, or until the vegetables begin to soften. Add the Acadian Cajun spice blend, salt and pepper and stir.<\/li>\n<li>Add the bay leaf, cooked bacon and sausages, pearl barley and potatoes. Pour the stock over the vegetables, cover, and bring to a boil.<\/li>\n<li>Reduce the heat and simmer on the stovetop for 12-15 minutes.<\/li>\n<li>Remove the lid and add butter.
