{"id":1802,"date":"2020-09-04T21:10:40","date_gmt":"2020-09-05T02:10:40","guid":{"rendered":"https:\/\/jessicatijerina.com\/?p=1802"},"modified":"2020-09-04T21:10:40","modified_gmt":"2020-09-05T02:10:40","slug":"mexican-corn-fritters","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2020\/09\/04\/mexican-corn-fritters\/","title":{"rendered":"Mexican Corn Fritters"},"content":{"rendered":"<h2>Mexican Corn Fritters<\/h2>\n<p><strong>Yield:<\/strong> 8-12 fritters<\/p>\n<h4>Ingredients<\/h4>\n<p>3-4 cups corn (preferably fresh off the cob)<\/p>\n<p>1\/3 cup all-purpose flour<\/p>\n<p>1\/3 cup cornmeal<\/p>\n<p>\u00bd teaspoon cumin<\/p>\n<p>\u00bd teaspoon chili powder<\/p>\n<p>\u00bd teaspoon kosher salt<\/p>\n<p>\u00bd teaspoon black pepper<\/p>\n<p>2 large eggs, beaten<\/p>\n<p>2 tablespoons fresh cilantro, chopped<\/p>\n<p>\u00bc cup green onions, chopped<\/p>\n<p>2 tablespoons canola oil<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>In a large bowl combine the flour, cornmeal, cumin, oregano, smoked paprika, chipotle powder, salt, and pepper. Add the eggs and mix thoroughly.<\/li>\n<li>Stir in the corn kernels, cilantro, and green onion.<\/li>\n<li>In a large skillet, heat the canola oil over medium heat.<\/li>\n<li>Form \u00bc cup of the mixture into a ball in your hand, then flatten it into a disc shape or \u201cfritter\u201d.<\/li>\n<li>Continue to make fritters until you have used up all the mixture.<\/li>\n<li>Add the fritters to the skillet and cook for 2 minutes on each side until they are lightly browned or more for crispier fritters.
