{"id":172,"date":"2018-04-27T19:29:54","date_gmt":"2018-04-28T00:29:54","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=172"},"modified":"2018-08-20T08:35:35","modified_gmt":"2018-08-20T13:35:35","slug":"spring-grain-salad-with-lime-and-mint","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2018\/04\/27\/spring-grain-salad-with-lime-and-mint\/","title":{"rendered":"Spring Grain Salad with Lime and Mint"},"content":{"rendered":"<h4>Yield: 3-4 cups<\/h4>\n<h4>Ingredients<br \/>\n1\/2 cup each dry farro, bulgur, red quinoa, brown rice<br \/>\n4 cups water<br \/>\n1 cup fresh mint, chiffonade<br \/>\nJuice of 1 lime<br \/>\nZest of 1 lime<br \/>\n1\/4 cup extra virgin olive oil or avocado oil<br \/>\n1 large sweet potato, diced into 1\/2&#8243; cubes<br \/>\n1 medium size white onion, diced into 1\/2&#8243; cubes<br \/>\n1 leek, rinsed, cleaned, cut in half and 1\/2&#8243; sliced<br \/>\n1 ripe avocado, diced into 1\/4&#8243; cubes<br \/>\n1 clove garlic, peeled and minced<br \/>\nKosher salt and fresh cracked black pepper to taste<\/h4>\n<h4>Method<br \/>\nPre-heat oven to 350 degrees<br \/>\nIn a medium bowl, toss sweet potato, onion and leek in 2 tablespoons olive\/avocado oil and a pinch of salt and pepper. Spread on a parchment lined baking sheet and bake until tender enough to pierce with a fork about 15-20 minutes.<br \/>\nBring 4 cups of water to boil and add grains. Cover and simmer until al dente, approximately 15-20 minutes.<br \/>\nChiffonade mint leaves. Zest and juice 1 lime. Combine in a medium size mixing bowl with remaining oil.<br \/>\nRemove grain from heat and let cool or place in refrigerator to cool.<br \/>\nRemove vegetables from stove and let cool.<br \/>\nOnce both cool, add to mixing bowl and fold until combined.
