{"id":1540,"date":"2020-06-13T17:46:58","date_gmt":"2020-06-13T22:46:58","guid":{"rendered":"https:\/\/jessicatijerina.com\/?p=1540"},"modified":"2020-06-13T17:47:01","modified_gmt":"2020-06-13T22:47:01","slug":"broccoli-cauliflower-smoked-cheddar-soup","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2020\/06\/13\/broccoli-cauliflower-smoked-cheddar-soup\/","title":{"rendered":"Broccoli-Cauliflower Smoked Cheddar Soup"},"content":{"rendered":"<h3 class=\"wp-block-heading\">Broccoli-Cauliflower Smoked Cheddar Soup<\/h3><p><strong>Yield:<\/strong> 8 cups liquid \/ 4 cups reserve solids<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>2 lbs broccoli\/cauliflower medley stems included, rinsed and chopped<\/li><li>\u00bc cup caramelized onion<\/li><li>1 tablespoon roasted garlic<\/li><li>1 tablespoon Kosher salt<\/li><li>2 teaspoons fresh cracked black pepper<\/li><li>8 cups broth, I used homemade vegetable stock<\/li><li>8 oz smoked cheddar\/gouda cheese, shredded, I used <a href=\"http:\/\/www.gilmancheese.com\/Content\/Smoked-Cheeses.cfm\">Gilman&#8217;s Smokey Swiss\/Cheddar<\/a> found at the <a href=\"https:\/\/www.northeastfarmersmarket.com\/saturday-market-vendors\">NE Minneapolis Farmer&#8217;s Market<\/a> at the <a href=\"https:\/\/www.facebook.com\/pg\/wisconsincheeseoutlet\/posts\/\">Wisconsin Cheese Outlet <\/a>booth<\/li><li>8 oz milk<\/li><\/ul><p><em>Optional:\u00a0 Radish greens and fresh chives<\/em>, I used both and the radish greens came from <a href=\"https:\/\/www.californiastreetfarm.com\/order.html?fbclid=IwAR1QIsAgGoFcSYqunBDXhVTYaIL4KuSHVVehu0Dy6A5F8aA5dOggj42k2R8\">California Street Farm<\/a>, a local NE Minneapolis sustainable grower off of California Street in NE Minneapolis.<\/p><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>In a large stock pot over medium high heat combine all ingredients except milk and cheese.<\/li><li>Let simmer for 25-30 minutes, stirring occasionally until broccoli and cauliflower are soft.<\/li><li>Remove from heat.<\/li><li>Using an immersion blender, blend ingredients until pureed.&nbsp; DO NOT use a food processor, Ninja, blender, or anything with a lid to blend hot liquid. The steam may cause it to combust and cause severe burns.<\/li><li>Return to heat and add milk and cheese and stir until cheese melted. Remove from heat and salt and pepper to taste.<\/li><li>While still warm, strain through a fine mesh sieve. Reserve solids for another dish.
