{"id":1505,"date":"2020-05-18T12:20:52","date_gmt":"2020-05-18T17:20:52","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=1505"},"modified":"2020-05-22T15:42:27","modified_gmt":"2020-05-22T20:42:27","slug":"simple-snacks","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2020\/05\/18\/simple-snacks\/","title":{"rendered":"Simple Snacks"},"content":{"rendered":"<h2 class=\"wp-block-heading\"><strong>Fruit Snacks \u201cBasic Recipe\u201d<\/strong><\/h2><p><strong>Yield:<\/strong>&nbsp; 1 9&#215;13 in baking dish or jelly roll pan lined with parchment, amount varies by sizes cut<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>1 \u00bd cups fruit juice, any type <em>(I have used apple, cherry, pineapple, and even fresh pressed watermelon)<\/em><\/li><li>4 tablespoons gelatin<\/li><li>4 tablespoons (1\/4 cup) honey <\/li><\/ul><h4 class=\"wp-block-heading\"><strong>Method<\/strong><\/h4><ol class=\"wp-block-list\" type=\"1\"><li>In a small bowl add 1\/2 cup fruit juice and sprinkle the gelatin over the top. Set aside to &#8220;bloom.&#8221;<\/li><li>In a medium saucepan combine remaining 1 cup fruit juice and honey.<\/li><li>Turn heat to medium and whisk the ingredients for 1-2 minutes until smooth and you can no longer see any sugar granules.<\/li><li>Remove from heat and mix in the gelatin mixture with a whisk.<\/li><li>Pour into prepared dish or using an eye dropper or turkey baster, drop juice into molds.<\/li><li>Refrigerate 30 minutes to 1 hour.<\/li><li>Pop out the molds or cut into desired shapes or use mini cookie cutter to cut out shapes.<\/li><li>Store in an airtight container in the refrigerator for up to 1 week.<\/li><\/ol><p><strong><em>Optional:&nbsp; Colors<\/em><\/strong><\/p><p class=\"has-text-color has-vivid-red-color\"><strong>Red:<\/strong>&nbsp; Pomegranate or Cherry Juice<\/p><p class=\"has-text-color has-luminous-vivid-orange-color\"><strong>Orange:<\/strong>&nbsp; Peach and Carrot Juice or Apricot<\/p><h2 class=\"wp-block-heading\"><strong>Homemade Fruit Snacks <\/strong><\/h2><p><strong>\u201cFresh\/Frozen Fruit &amp; Veggies\u201d<\/strong><\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>1 cup fruit juice<\/li><li>1 \u00bd cups fresh or frozen fruit<\/li><li>\u00bc cup honey (4 tablespoons)<\/li><li>\u00bc cup (4 tablespoons) lemon juice<\/li><li>4 tablespoons gelatin<\/li><\/ul><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>In a medium saucepan over medium heat add 1\/2 cup fruit juice, fresh or frozen fruit (veggies if using), lemon juice and honey and cook until thickened or 10-15 minutes. Stir occasionally. (beets and carrots will need to cook down a bit longer)<\/li><li>Once fruit mixture has thickened turn off and remove from the heat. Let cool 15 minutes.<ol><li><em>You can strain the fruit mixture to remove the seeds if you wish<\/em><\/li><\/ol><\/li><li>In a medium bowl add remaining \u00bd cup fruit juice and sprinkle the gelatin over the top. Let \u201cbloom\u201d 5 minutes.<\/li><li>Once the fruit mixture is cooled down, whisk in the gelatin mixture until smooth.<\/li><li>VERY IMPORTANT if you are using a blender or food processor:\u00a0 Let it cool down.<\/li><li>Using a blender, immersion blender, ninja or food processor, blend until all has been incorporated.<\/li><li>Taste for tartness and sweetness. Add more honey or lemon juice to your taste.<\/li><li>Pour into prepared dish or using an eye dropper or turkey baster, drop juice into molds.<\/li><li>Refrigerate 30 minutes to 1 hour.<\/li><li>Cut into squares or use cookie cutter for shapes and store in an airtight container in the refrigerator for up to 1 week.<\/li><\/ol><div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\"><p><strong><em>Optional: Fruit\/Veggie combos<\/em><\/strong><\/p>\n\n<p class=\"has-text-color has-vivid-purple-color\"><strong>Blue\/Purple<\/strong><\/p>\n\n<ul class=\"wp-block-list\"><li>1&nbsp;cup&nbsp;blueberries or blackberries<\/li><li>\u00bc&nbsp;cup&nbsp;chopped zucchini<\/li><\/ul>\n\n<p class=\"has-text-color has-vivid-green-cyan-color\"><strong>Green<\/strong><\/p>\n\n<ul class=\"wp-block-list\"><li>1&nbsp;cup&nbsp;green grapes<\/li><li>\u00bc&nbsp;cup&nbsp;spinach<\/li><\/ul>\n\n<p class=\"has-text-color has-vivid-red-color\"><strong>Red<\/strong><\/p>\n\n<ul class=\"wp-block-list\"><li>1&nbsp;cup&nbsp;strawberries diced or raspberries<\/li><li>\u00bc&nbsp;cup&nbsp;peeled and diced beets<\/li><\/ul>\n\n<p class=\"has-text-color has-luminous-vivid-orange-color\"><strong>Orange<\/strong><\/p>\n\n<ul class=\"wp-block-list\"><li>1&nbsp;cup&nbsp;peaches or apricots&nbsp;chopped<\/li><li>\u00bc&nbsp;cup&nbsp;peeled and diced carrots<\/li><\/ul><\/div><\/div><h3 class=\"wp-block-heading\"><strong>Chewy PB Chocolate Granola Bars<\/strong><\/h3><p><strong>Yield:<\/strong>&nbsp; 24 Granola Bars<\/p><h4 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h4><ul class=\"wp-block-list\"><li>\u00be cup honey<\/li><li>2 cups peanut butter<\/li><li>8 tablespoons unsalted butter<\/li><li>\u00bd cup brown sugar<\/li><li>1 teaspoon kosher salt<\/li><li>2 teaspoons vanilla extract<\/li><li>5 cups old-fashioned oats<\/li><li>1 cup Optional Additions (See Below)<\/li><li>1 cup mini chocolate chips<\/li><\/ul><h6 class=\"wp-block-heading\"><em>Optional Additions \/ Mix &amp; Match:&nbsp; Coconut flakes, Dried fruit: cranberry, date, raisin, Seeds:&nbsp; hemp, sunflower, pumpkin, Nuts:&nbsp; Almonds, Walnuts, Pistachio, Macadamia, mini marshmallows<\/em><\/h6><h4 class=\"wp-block-heading\"><strong>Method<\/strong><\/h4><ol class=\"wp-block-list\" type=\"1\"><li>Line a baking sheet or jelly roll pan with parchment paper just to over the edge.<\/li><li>In a medium saucepan, mix honey, peanut butter, butter, brown sugar, and salt over medium heat, stirring constantly until smooth.<\/li><li>Do not let it boil. Remove from the heat and stir in the vanilla. Set aside and let cool for 20 minutes or refrigerate for 10-15.<\/li><li>In a large bowl, combine oats and optional add-ins and once the honey mixture is cool, combine all.
