{"id":1246,"date":"2020-04-13T15:28:06","date_gmt":"2020-04-13T20:28:06","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=1246"},"modified":"2020-04-13T15:28:17","modified_gmt":"2020-04-13T20:28:17","slug":"cook-once-eat-thrice","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2020\/04\/13\/cook-once-eat-thrice\/","title":{"rendered":"Cook Once&#8230;Eat Thrice"},"content":{"rendered":"<h2 class=\"wp-block-heading\">Meal #1, 2, 3:  Pork Chops<\/h2><p>Serves 4<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>8 boneless pork chops<\/li><li>Kosher salt<\/li><li>Fresh ground black pepper<\/li><li>1 tablespoon any spice blend you like<\/li><li>1 \u00bd cups all-purpose flour<\/li><li>\u00be cup canola oil (or any lighter oil for frying, avocado, sunflower, etc.)<\/li><li>2 tablespoon butter<\/li><\/ul><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>Combine the flour and spice blend.<\/li><li>Sprinkle salt and black pepper on pork chops.<\/li><li>Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.<\/li><li>In a cast iron or saute pan, heat the oil over medium-high heat. Add the butter.<\/li><li>When the butter is melted cook the pork chops 2-3 minutes on the first side.<\/li><li>Flip and cook until the chops are golden brown, 1-2 minutes or until it reaches 145 degrees.<\/li><li>Remove from pan and let rest 1-2 minutes. Leave the oil in the pan for a pan gravy. (see recipe below)<\/li><li>Wrap and refrigerate 4 chops for future bowls and pozole.<\/li><\/ol><p>*Bake Option:&nbsp; 375 degrees for 25 minutes or until internal temperature reaches 145 degrees<\/p><h2 class=\"wp-block-heading\">Pan Gravy (Meal #1)<\/h2><p>Yield: 1 cup gravy<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>2 tablespoons oil from frying the chops<\/li><li>3 tablespoons flour<\/li><li>1 \u00bd cups stock or water<\/li><li>1 teaspoon herbs of your choice<\/li><li>Kosher salt<\/li><li>Fresh cracked black pepper<\/li><\/ul><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>Place pan with oil over medium-high heat add flour and whisk to combine.<\/li><li>Cook the roux for a minute then whisk in the stock or water.<\/li><li>Bring to a gentle boil then reduce to a simmer.<\/li><li>Add herbs.<\/li><li>Simmer, stirring occasionally until desired thickness is achieved. 8-10 minutes typically.<\/li><li>Season with salt and pepper.<\/li><\/ol><h2 class=\"wp-block-heading\">Boiled\/Baked Rice (Meal #1, 2)<\/h2><p>Yield: 4 cups cooked rice<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>Butter for baking dish<\/li><li>water or broth<\/li><li>2 cups white rice<\/li><li>1 tablespoon cold butter, cut into two pieces<\/li><\/ul><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>Pre-heat oven to 350 degrees.<\/li><li>Lightly butter an oven proof dish.<\/li><li>Place rice and enough water to cover rice in a saucepan and cook over medium high heat until it boils, and the rice is al dente, soft on the outside, hard in the middle, 4-6 minutes.<\/li><li>Drain water and discard.<\/li><li>Pour rice into prepared baking dish, add butter. Cover with foil.<\/li><li>Bake for 15 minutes.<\/li><li>Remove from oven, let cool 5 minutes, remove foil and fluff with a fork.<\/li><li>Reserve half of the rice for future rice bowls (recipe below)<\/li><\/ol><h2 class=\"wp-block-heading\">Baked Vegetables (Meal #1, 2)<\/h2><p>Serves 4<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>1 peeled and diced sweet potato<\/li><li>1 peeled and diced onion<\/li><li>1 zucchini sliced into thick medallions<\/li><li>1 head broccoli, chopped<\/li><li>2 carrots, sliced into thick medallions<\/li><li>2 tablespoons butter<\/li><li>2 tablespoon oil<\/li><li>Kosher salt<\/li><li>Fresh cracked black pepper<\/li><\/ul><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>Pre-Heat oven to 400 degrees.<\/li><li>Line a sheet tray with parchment.<\/li><li>In a bowl toss together diced and sliced vegetables with oil, salt and pepper.<\/li><li>Pour onto sheet tray and bake 12-15 minutes or until you can pierce a fork into a sweet potato.<\/li><li>Remove from oven and separate half to cool to package up and use for a future bowl.<\/li><\/ol><h1 class=\"wp-block-heading\">Meal #2:  Pork Rice Bowl<\/h1><p>Yield: &nbsp;2 Servings<\/p><h4 class=\"wp-block-heading\">Ingredients<\/h4><ul class=\"wp-block-list\"><li>1 cup chopped pork (1-2 chops), heated up.<\/li><li>2 cups pre-cooked rice<\/li><li>Baked vegetables from previous recipe<\/li><li>\u00bc cup black beans, heated up<\/li><li>\u00bc cup roasted corn, heated up<\/li><li>2 tablespoons of your favorite dressing or sauce<\/li><\/ul><p><em>Optional:&nbsp; 1 ripe avocado, peeled and sliced, \u00bd medium red onion diced, sliced green onion<\/em><\/p><h4 class=\"wp-block-heading\">Method<\/h4><ol class=\"wp-block-list\" type=\"1\"><li>Divide everything into two bowls. Pork, rice, vegetables, black beans and corn.<\/li><li>Add optional ingredients or whatever you want to add from your crisper!
