{"id":1222,"date":"2020-04-08T09:45:16","date_gmt":"2020-04-08T14:45:16","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=1222"},"modified":"2020-04-08T09:45:19","modified_gmt":"2020-04-08T14:45:19","slug":"palak-paneer","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2020\/04\/08\/palak-paneer\/","title":{"rendered":"Palak Paneer"},"content":{"rendered":"<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\"><h4 class=\"wp-block-heading\">Palak Paneer \u2013 Indian Spinach and Cheese<\/h4>\n\n<p><strong>Yield:<\/strong> 4 Servings<\/p><\/div><\/div><h4 class=\"wp-block-heading\">Ingredients<\/h4><div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\"><p>4 cups frozen&nbsp;spinach, thawed<\/p>\n\n<p>1&nbsp;medium&nbsp;tomato<\/p>\n\n<p>5&nbsp;large&nbsp;garlic cloves, 3 peeled and left whole and 2 peeled and diced<\/p>\n\n<p>1-inch&nbsp;piece of ginger<\/p>\n\n<p>1&nbsp;green chili or jalape\u00f1o<\/p>\n\n<p>1&nbsp;tablespoon&nbsp;oil, I used avocado<\/p>\n\n<p>1&nbsp;large&nbsp;onion, finely diced<\/p>\n\n<p>\u00bd cup&nbsp;water<\/p>\n\n<p>1-2&nbsp;teaspoons Tijerina Global Spice Garam Masala (any Garam Masala will do for now)<\/p>\n\n<p>\u00bc teaspoon&nbsp;turmeric powder<\/p>\n\n<p>\u00bc teaspoon&nbsp;cayenne, or to taste<\/p>\n\n<p>Kosher salt, to taste<\/p>\n\n<p>2-3&nbsp;tablespoons&nbsp;heavy cream or plain yogurt<\/p>\n\n<p>1 block, 8 oz.&nbsp;paneer, cut into cubes<\/p>\n\n<p>\u00bd tablespoon&nbsp;kasuri methi, crushed, dried fenugreek leaves <em>(I typically do not have this on hand, and it is difficult to find, so a fine substitute is celery leaves. Yes! Finally, some use for them other than broth!)<\/em><\/p>\n\n<p>Fresh squeezed lemon juice, to taste, about 1 tablespoon<\/p><\/div><\/div><h4 class=\"wp-block-heading\"><strong>Method<\/strong><\/h4><ol class=\"wp-block-list\" type=\"1\"><li>In a blender add the spinach, tomato, 3 whole garlic, ginger and green chili\/jalape\u00f1o. Puree to a smooth paste and set aside.<\/li><li>Heat a pan on medium heat. Once hot, add the oil and then add the remaining 2 cloves of diced garlic. Saut\u00e9 for few minutes until it starts brown, then add the diced onion.<\/li><li>Cook the onion and garlic for 2-3 minutes until soft and translucent.<\/li><li>Add in the prepared spinach puree and water and stir.<\/li><li>Cover the pan and let it cook for 10 minutes on medium heat. The spinach will bubble a lot.\u00a0Stir at regular intervals to avoid sticking to the bottom and burning.<\/li><li>After about 10 minutes add the garam masala, turmeric powder, cayenne and salt, mix and cook for 1 minute.<\/li><li>Add the heavy cream or yogurt and paneer and stir.
