{"id":1082,"date":"2020-03-03T22:51:42","date_gmt":"2020-03-04T04:51:42","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=1082"},"modified":"2020-03-03T22:51:42","modified_gmt":"2020-03-04T04:51:42","slug":"creole-cajun-crawfish-etouffee","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2020\/03\/03\/creole-cajun-crawfish-etouffee\/","title":{"rendered":"Creole\/Cajun Crawfish \u00c9touff\u00e9e"},"content":{"rendered":"<h4>Creole\/Cajun Crawfish\u00a0\u00c9touff\u00e9e<\/h4>\n<p><em>*Creole because we use butter, Cajun because we use the Acadian Cajun spice with no herbs.<\/em><\/p>\n<p><strong>Yield:<\/strong>\u00a0 4-6 Servings<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1-pound unsalted butter<\/p>\n<p>2 cups diced yellow onion<\/p>\n<p>1 cup diced green bell pepper<\/p>\n<p>1 cup diced celery<\/p>\n<p>1 tablespoon minced garlic<\/p>\n<p>1 teaspoon Tijerina Acadian Spice Blend<\/p>\n<p>1\/2 cup flour<\/p>\n<p>1\u00bd cups crawfish stock or seafood stock<\/p>\n<p>2 pounds Louisiana crawfish tail meat**<\/p>\n<p>Kosher salt<\/p>\n<p>Freshly ground black pepper<\/p>\n<p>Dash of hot sauce<\/p>\n<p>\u00bc cup chopped flat-leaf parsley<\/p>\n<p>1 cup diced green onion, green part only<\/p>\n<p>6 cups cooked long-grain white rice<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>In a large skillet over medium heat, melt the butter and add the onions, bell pepper, and celery. Saut\u00e9 until tender and add the garlic.<\/li>\n<li>Lower the heat to a simmer and stir to combine. Season the mixture with Acadian Spice Blend.<\/li>\n<li>Sprinkle the flour over the mixture and stir to incorporate and begin cooking the flour.<\/li>\n<li>Add some of the stock, 1\/2 cup at a time and continue stirring until it begins to thicken.<\/li>\n<li>Add more stock until you get a stew-like thickness.<\/li>\n<li>Add the crawfish. Simmer for 5 minutes. Season to taste with salt, pepper, and hot sauce.<\/li>\n<li>Serve over a mound of white rice garnished with chopped parsley and green onion.<\/li>\n<\/ol>\n<p>Enjoy!<\/p>\n<p><em>**Crawfish may be a seasonal item, call ahead for availability (June is the season).
